Ingredients:
  • 4 boneless, skinless chicken breasts (or thighs)
  • ½ cup buttermilk
  • 2 Tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano (or 1 teaspoon fresh oregano, chopped)
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme, chopped)
  • ½ teaspoon smoked paprika
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese (optional)
  • 2 Tablespoons olive oil
Instructions:
  • Marinate the chicken: In a bowl, whisk together buttermilk, lemon juice, lemon zest, garlic, salt, pepper, oregano, thyme, and paprika. Add the chicken and let marinate for at least 30 minutes (or up to 8 hours for extra tenderness).
  • Preheat oven to 400ºF. Line a baking sheet with parchment paper and drizzle with olive oil.
  • Coat the chicken: In a shallow bowl, mix panko breadcrumbs and Parmesan cheese. Remove the chicken from the marinade, letting the excess drip off, and coat in the breadcrumb mixture. Press gently to ensure an even crust.
  • Bake: Place the chicken on the prepared baking sheet and drizzle with a little more olive oil. Bake for 20-25 minutes until golden and crispy, and the internal temperature reaches 165ºF.
  • Rest & serve: Let the chicken rest for 5 minutes, then serve with extra lemon wedges and a glass of Dr. L Sparkling Riesling.
