Spicy Peanut Noodles with Lime & Crunchy Veggies

Ingredients:

For the Sauce:

  • ⅓ cup creamy peanut butter
  • 2 Tablespoons soy sauce
  • 1 Tablespoon sesame oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon maple syrup or honey
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • ½–1 teaspoon sriracha or chili garlic sauce (adjust to heat preference)
  • Juice of 1 lime
  • Warm water, to thin as needed

For the Noodles:

  • 12 oz cooked soba, rice noodles, or spaghetti
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 1 cup shredded red cabbage
  • ½ cup chopped cucumber
  • ¼ cup chopped scallions
  • ¼ cup chopped cilantro

To Garnish:

  • Crushed peanuts
  • Lime wedges
  • Extra sriracha
Instructions:
  • Make the Sauce: Whisk together all sauce ingredients in a bowl. Add warm water a tablespoon at a time until smooth and pourable.
  • Toss It Together: In a large bowl, combine noodles, veggies, and sauce. Toss until everything’s well coated.
  • Serve: Top with crushed peanuts, fresh cilantro, scallions, and a squeeze of lime.
  • Optional Add-Ins: Add grilled shrimp or tofu for extra protein.
