Mocktail Recipe

Fresh, crisp, and delightfully unexpected, Dr. Lo Riesling with Bubbles meets vibrant honeydew and fragrant cilantro for a sip that’s as refreshing as it is refined. Light, herbal, and effortlessly cool—because who says a mocktail can’t steal the spotlight?

Ingredients:
  • 3 oz. Dr. Lo Riesling with Bubbles
  • 1 oz. Honeydew & cilantro purée

Add honeydew & cilantro purée to the bottom of a chilled fluted glass or cocktail coupe. Top with Dr. Lo Riesling with Bubbles. Garnish with a honeydew melon ball placed in or on the edge of the glass.

To make honeydew & cilantro purée:
  • 1/2 honeydew melon
  • 8 sprigs of cilantro, remove stems
  • 1 cup water
  • 2 Tablespoon raw sugar

Place ingredients in a food processor and mix until combined. Transfer to an airtight container and store for up to two weeks.

Ingredients:
  • 1 oz pineapple syrup
  • 1 oz coconut water
  • 1 oz guava nectar
  • 5 oz Dr. Lo Alcohol-Removed Riesling with Bubbles
  • 1 lime wedge
  • Ice

Stir together the pineapple syrup, coconut water, and guava nectar. Pour in a large coupe glass and top with Dr. Lo Riesling with Bubbles. Squeeze a fresh lime wedge over the drink and serve.

To make the pineapple syrup:

Reduce 2 cans (8.4oz each) of pineapple juice in a saucepan until thick and purée-like (about 45-60 minutes). Let cool and store.

Ingredients:
  • 3 oz. Dr. Lo Riesling with Bubbles
  • ½ oz. Lavender-Honey syrup

Add lavender-honey syrup to the bottom of a chilled fluted glass or cocktail coupe. Top with sparkling Riesling. Garnish with a long lavender stalk and spring.

To make lavender-honey syrup:
  • 1/2 cup honey
  • 1/2 cup water
  • 2 Tbsp. fresh lavender leaves OR dried lavender buds

Heat water in a small saucepan until hot, but not boiling. Add honey and lavender leaves (or buds), and stir until honey is completely dissolved.

Remove from heat, and let steep for one hour. Stir every fifteen minutes or so to recombine the lavender into the liquid.

Strain the syrup through a fine mesh sieve, and into an airtight container. Press down on the lavender in the fine mesh sieve to squeeze more flavor into the syrup. Discard lavender.

Ingredients:

  • 3 oz Dr. Lo Sparkling Riesling
  • 1 oz fresh peach purée
  • ½ oz lemon juice
  • Optional: ¼ oz honey or simple syrup
  • Peach slice or mint sprig, for garnish

In a chilled flute glass, add peach purée and lemon juice (plus honey/simple syrup if using). Slowly pour in Dr. Lo Sparkling Riesling, letting the bubbles naturally mix with the purée. Give a gentle stir, garnish with a peach slice or mint sprig, and serve immediately.

A light honey-mustard dressing ties everything together, making this salad refreshing, elegant, and effortlessly delicious.

Ingredients:
  • 1 large Honeycrisp or Granny Smith apple, thinly sliced
  • 1 small fennel bulb, thinly shaved (fronds reserved for garnish)
  • ¼ small red onion, thinly sliced
  • ¼ cup walnuts or pecans, toasted and chopped
  • 2 oz goat cheese or Parmesan shavings (optional, for extra creaminess!)
  • 2 cups baby arugula or mixed greens
  • Salt & freshly ground black pepper, to taste
Dressing:
  • 2 Tablespoons fresh lemon juice (for a bright, citrusy lift!)
  • 1 Tablespoon white wine vinegar (balances the fruitiness!)
  • 1 teaspoon Dijon mustard (adds depth & zing!)
  • 1 teaspoon honey (just a hint of sweetness to complement the wine!)
  • ¼ cup extra virgin olive oil
  • Salt & freshly ground black pepper, to taste
Instructions:
  1. Make the dressing: In a small bowl, whisk together lemon juice, vinegar, Dijon mustard, honey, salt, and pepper. Slowly whisk in olive oil until the dressing emulsifies.
  2. Assemble the salad: In a large bowl, toss together apple slices, fennel, red onion, and greens.
  3. Dress & garnish: Drizzle with dressing and toss gently to coat. Top with toasted walnuts, goat cheese (if using), and reserved fennel fronds.
  4. Serve immediately with a chilled glass of Dr. L Sparkling Riesling.
